Hailing from Bermuda, this old school cocktail consists of lashings of Goslings Black Seal rum, fresh lime, topped with ginger beer.

Fresh and full of zest, Le Corolle sees Belvedere Cytrus vodka, Cointreau and Galliano vanilla matched with white grapefruit, lemon juice and palm sugar. Definitely one to kick your tastebuds into action.
APPLEJACK SMASH
The drink of the Summer sees Laird’s Applejack, Hennessey VSOP cognac and a dash of barrel-aged bitters all smashed together with fresh lemons and mint. Served tall with plenty of ice.
RASPBERRY COLLINS
A tart and refreshing Carlton twist. The West Winds’ Sabre gin, lemon juice and sugar, muddled with fresh raspberries and a splash of La Fee absinthe.
THE SUNDANCE SOUR
Aperol and Campari shaken heavy with Vanilla Galliano, white grapefruit, lemon juice and sugar. Bartender’s choice (NB: contains egg white).
LA DOLCE VITA
Frangelico and 42 Below vodka muddled with fresh strawberries and shaken with apple and citrus juices. Served long and sexy. It’s a sweet life.

This summer special is made from TMD Rock melon liqueur and Belvedere Cytrus vodka stirred with slices of fresh cucumber, lemons, TWR Pinot Gris, soda water and a splash of La Fee absinthe.

Our pimped out Paloma Jug sees Tromba blanco tequila, agave syrup and white grapefruit mixed with fresh limes and a touch of apple juice.
SANGRIA
An old classic but still the best. Our Spanish recipe here at the Carlton is a mix of TMD apricot brandy, Pedro Ximenez sherry and 10 cane rum stirred with red wine, citrus wheels, orange and a touch of lemonade.

Lashings of 10 cane rum stirred with apricot liqueur, ginger honey, mint, pineapple juice and chunks, bitters topped with soda water.
